La Resistencia: Swiss Water Decaf
This is a special decaf, for many reasons. More important than tasting incredible, it's a blend from the Indigenous Xinca farmers who form The Café Colis Resistencia movement.
These farmers are defending their lands (the same ones that grows the coffee you drink) from a Canadian owned silver mine that is trying to wipe our their lands, culture, livelihoods and lives, with impunity.
By buying this coffee, you are supporting the Café Colis Resistencia's ability to continue defending their lands and receiving fair wages for the coffee.

- ESPRESSO: If want to try pulling this, go fine! Decaf need a fine grind and can sometimes be tricky to dial in. But this one can pull smoother than Ryan Gosling in leisure wear.
- POUR-OVER: We recommend grinding a touch coarser for pour over for this roast, and try to limit your pours to 1-2 (post bloom) and total time closer to 3 minutes.
- FRENCH PRESS: We recommend the James Hoffman method for this roast: 16.67:1 ratio // medium grind (not too coarse) // add water, do not stir, brew for 4 minutes // after 4 mins break crust gently, scoop everything that floats // let sit for another 5-8 minutes // don't press all the way, only use it as a filter at the surface of the brew.
I'd hoped for a darkest, fuller-tasting body from this coffee. Maybe the Artery will carry a dark decaf bean in the future. I hope so.

It's hard to find anything but dark roast decaf, so this medium roast is such a treat. All the smooth flavour complexity without the jitters.
