We partnered up with a new micro roaster called tin., who focus on rare and weird coffees, and we collabed on this gem from Yorgeny Torres, the younger sister of Frank Torres. She grows this coffee on her farm La Casa, which is part of the famed finca La Indonesia. 

It's a washed caturra that has undergone a washed extended fermentation, under the innovative processing and strict guidelines of the Torres family.

More about the processing method:

This beautiful coffee underwent a unique washed processing with an extended fermenteation. Harvested cherries are measured for their sugar content, ensuring a reading of 22 degrees Brix before processing.

Cherries are then sorted via floatation to remove defects before being washed with a mixture of water and alcohol. The washed cherries are put into food-grade plastic tanks and are dry fermented for 48 hours before being depulped. Pulped coffee is then dry fermented again for 60 hours.

The fermented coffee is then with a single rinse, and then dried for 15–20 days until reaching 14% humidity. The coffee is finished with sun drying for one to two hours a day until reaching the final target humidity.

La Casa is a part of Finca La Indonesia. It is located in La Union, 90km from Pasto. Thanks to the efforts of farmers like the Torres family, this area has been transformed from one of illicit trade and violence, into a resilient community dedicated to growing specialty coffee.

This farm is a Torres family inheritance known for exceptional coffee production for over 40 years. Yorgeny is Frank's younger sister and is just getting her start in specialty coffee. Her brother Frank is helping her with her planting and processing. Franks experience and innovations, has helped him push the boundaries of processing, making this one of the most unique, and innovative farms in Colombia. His continuous efforts to improve farming practices has helped him turn 90% of his farm organic as way to preserve soil conditions and protect his crops from plague and devastation.

Brewing Tips

  • POUR OVER: For a V60, we recommend grinding fine-medium for this roast, 2-3 pours (post bloom).  We use a 1:15 for a real complex and velvety cup, or a 1:16/1:17 for a more rounded cup. Don't over-extract (over 3 min) as this coffee is delicate. We love this coffee on a flat bottom dripper too!
