Zapped: Natural Light Roast (SP)
Adasmin Bautista began growing coffee 30 years ago, back when he was a teenager, helping his parents on their coffee farm. His mother gifted him a small parcel of land, and with the support of his family, he started his own coffee plot. Thanks to the income from this small farm, he was able to expand the area, now covering more than one hectare. He called his farm El Zapote.
Zapotes are a family of soft, sweet fruits, and that description is pretty apt for this natural Typica. It has lots of sweetness and red berries and red fruit notes. But is still very delicate and not overly funky. It is easy to drink while still offering a complex profile that develops as the cup cools.
Honduran coffees have been brilliant over the past couple crops and this coffee is no exception.

Cherries are picked at peak ripeness and fermented dry in tanks for 24 hours, then they are de-pulped and dried on raised beds in a solar dryer for 25 to 30 days.
Brewing Tips:
- ESPRESSO: If wanting to pull this light honey processed jam as an espresso, we recommend playing with you ratios a bit to ward off a shot that might be a bit too bright. Try a 1:2.5 ratio, and grind a litter finer for a longer shot.
- POUR OVER: We recommend grinding a touch medium/medium-fine for this roast, 2-3 pours (post bloom). We use a 1:16 for this one.
- FRENCH PRESS: We recommend the James Hoffman method for French press: 1:16.67 ratio // medium grind (not too coarse) // add water, do not stir, brew for 4 minutes // after 4 mins break crust gently, scoop everything off that floats // let sit for another 5-8 minutes // don't press all the way, only use it as a filter at the surface of the brew.
- ICED COFFEE: Perfect as a pour over flash freeze brew. Use large cocktail ice, lower your brewing ratios and then prepare as you usually would!
